Light Cheddar cheese cake
Assalamualaikum, dah banyak kali mamadee cuba resepi dari Sonia nasi lemak lover ni. Seingat Mamadee ini adalah antara kek terawal yg mamadee pandai buat selain dari kek coklat..hehe. Kiranya, kek ini antara yg fool proof la. Orang yang beginner pun boleh buat dan tak rumit.
Kek ini seakan-akan Japanese Cheese Cake, tetapi kek ini menggunkan cheddar cheese, bukannya cream cheese seperti Japanese cheese cake, orang kta nampak sama tapi bukan dia.

Ingredients
6 slices of cheddar cheese (~20g per slice)
100g fresh milk
100g unsalted butter
6 egg yolks (large)
6 egg whites (large), cold from fridge
100g caster sugar
100g cake flour
Method
1. Place butter and tear up cheddar cheese slices in a bowl over a pot of simmering water, take a spatula and stir to melt, then add in milk and stir until all melted and mixed together. Set aside to cool slightly before use.
2. Lightly whisk the egg yolks in another mixing bowl. Ladle big spoonful of the cheese mixture into the egg yolks. Mix well and then add in the rest and combine well.
3. Sift in the cake flour into the egg yolk mixture and make sure no lumps.
4. Preheat the oven to 150C with a steam bake (I place 5 small bowls water underneath). Grease and line (bottom and sides) the baking pan
5. In another mixing bowl, beat egg white till foamy. Gradually add in sugar and beat till stiff peaks or at least close to stiff.
6. Use a whisk, mix 1/3 of egg white mixture with cheese mixture, mix to combine and till light.
7. Gently fold in the balance egg white mixture with a spatula, mix well.
8. Pour the batter into the prepared pan and smooth out the surface.
9. Bake the cake in the oven for 60 minutes at lower rack or till the tester comes out clean.
10. Let cake sit inside the oven for 5mins with oven door ajar. Remove from oven, immediately remove cake from cake pan, cool on wire rack.
Versi Bahasa Melayu
Bahan-bahan
6 keping cheddar cheese
100 g susu segar
100 g mentega tanpa garam
6 biji kuning telur
6 biji putih telur
100 g gula kaster
100 g tepung kek
Cara-cara.
1. Panakan air di dalam periuk sehingga mendidih. Kemudian, koyak-koyakkan cheddar cheese. Campurkan cheddar cheese dan mentega di dalam bekas besi. Panaskan bekas tersebut secara bain-marie di atas periuk yg berisi air panas tadi (mamadee guna microwave, set dalam 20 saat, kemudian cheese dan mentega tadi cair). Panaskan sehingga cheee dan mentega tadi cair.
2. Kemudian kacau telur kuning di dalam mangkuk berasingan, kemudian masukkan adunan cheese dan mentega tadi ke dalam telur kuning tadi. Kacau sehingga sebati.
3. Ayak tepung ke dalam adunan telur +cheese+mentega tadi. Kacau sehingga semua bercampur sebati.
4. Panaskan oven 150 degree C secara steam bake. (Mamadee letak tray besar berisi air di dalam rak paling bawah di dalam oven).
5. Di dalam mangkuk berasingan, pukul telur putih sehingga berbuih, kemudian masukka sedikit demi sedikit gula kedalam telur putih tadi. Pukul sehingga kental.
6. Kemudian masukkan 1/3 daripada telur putih tadi kedalam adunan telur kuning+cheese+mentega. Kaup balik sehingga sebati.
7. Masukkan baki telur putih selebihnya kedalam adunan. Kaup balik sehingga selesai.
8. Curahkan adunan kedalam loyng.
9. Bakar di dalam oven selama 60 minit secara steam bake.
10. Setelah kek masak, biarkan ia berada di dalam oven selama 5 minit. Kemudian keluarkan daripada oven dan terus keluarkan kek dari loyang. Sejukkan di atas rak.
